I needed something to add to my recipe so I started searching the internet… Low and behold, not once did I see anyone post the kind of recipe I grew up with, I mean the kind momma used to make. I know there are people out there like me looking for the fried egusi recipe but no, it is not available anywhere on the internet (at least not till now anyway).
So, I’ve decided to help my ministry by putting it up as best as I could. Here goes…
Wash your pepper, onions and tomatoes and blend. Pour it in a pot and place it on medium heat. Add the seasoning, salt, meat, ponmo and fish. Cover the pot and cook on medium heat for 15 minutes.
If the melon is fresh wash it, rinse or blow your crayfish and put everything in the blender, add a little water and blend. If it’s granulated melon, just add some warm water and mix. Add a little salt to your egusi and set aside.
If you have more than one cooker, place fry pan on medium heat, pour in your palm oil and pour in your egusi after 2 seconds. Separate the melon with your cooking spoon and leave to fry a little before turning it so you would have clumps. Melon burns on time so be careful with it.
When it’s all fried, empty it into the pepper you have cooking on the other side and leave to simmer for 3 minutes since it’s all done already. Pour in your vegetables and mix everything together while been careful not to break the clumps. Leave to simmer for additional 4 minutes. And you’re welcome!
